This is a patient education brochure designed to describe the development of food habits of the people of eastern North Carolina (written in collaboration with Kristen Borree, PhD, anthropology. It then localizes the dietary guidelines for Americans. And, it includes a quiz for kitchen safety (developed in collaboration with Carolyn Lackey PhD, RD, LDN, Food and Nutrition Extension Specialist, North Carolina State University).
The two page description of food habits is one of the few descriptions of local food habits.
